“Le Zouave” comes from organically farmed Chardonnay grown on the marl and limestone soils around Montigny-lès-Arsures, one of the Jura’s most respected communes. The Fumey-Chatelain family picks early for freshness and vinifies this cuvée in topped-up barrels (ouillé), keeping the wine pure and non-oxidative.
