Domaine Simon Bize et Fils is a longstanding Savigny-lès-Beaune estate, today led by Chisa Bize and known for traditional, understated Burgundy from vineyards throughout the village and neighboring appellations. Their Aux Vergelesses Blanc comes from a tiny 0.30-hectare parcel planted to Chardonnay in 1996. The steep, south to southeast-facing vineyard is planted on sandy marl and limestone and benefits from both generous sunlight and cooling winds. This vintage was fermented and aged in oak, with the domaine increasingly favoring larger 600-liter demi-muids and using only a modest proportion of new wood. Fresh citrus and white peach are joined by subtle floral and nutty notes, with a fine texture and bright acidity carrying the wine through a long, mineral finish.
