Domaine Simon Bize et Fils is a longstanding Savigny-lès-Beaune estate, today led by Chisa Bize, who has continued the domaine’s traditional approach while introducing her own experiments in the vineyard and cellar. Aka, meaning “red” in Japanese, is a special cuvée made from Pinot Noir grown in the Planchots and Bourgeots parcels of Savigny-lès-Beaune. The 2022 was fermented with 100% whole clusters and bottled without added sulfur. Light and energetic, it shows fresh raspberry, red cherry and wild strawberry alongside subtle spice and earthy notes. The palate is delicate and silky, with fine tannins and bright acidity carrying the red fruit through a fresh, savory finish.
