Domaine Michel Gay et Fils is a family estate based in Chorey-lès-Beaune, now led by brothers Sébastien and Laurent Gay. Their Les Vergelesses comes from Pinot Noir grown high on the slope in one of Savigny-lès-Beaune’s best-known Premier Cru vineyards. The site is planted on clay-limestone soils and produces a finely structured expression of Savigny. The 2017 was harvested by hand, destemmed and given a cold pre-fermentation maceration before fermentation, followed by 15 months in barrel with 50% new oak. Red cherry and raspberry are joined by subtle spice and earthy notes. The palate is fresh and elegant, with fine tannins and a mineral character carrying through the long, savory finish.
