Domaine Michel Gay et Fils is a family estate based in Chorey-lès-Beaune, now led by brothers Sébastien and Laurent Gay. Their Aux Serpentières comes from Pinot Noir grown in a south-facing Premier Cru vineyard in Savigny-lès-Beaune, on the slopes below the hill of Corton. The site’s limestone and clay soils produce a generous but finely structured expression of Savigny. The 2020 was aged for 18 months in French oak, with less than 35% new barrels. Ripe cherry and raspberry are joined by violet, black pepper and subtle earthy spice. The palate is supple and medium-bodied, with fine tannins and fresh acidity balancing the ripe fruit and carrying through a long, savory finish.
