Antoine Chevalier’s Intégrale was created from the 2021 vintage by bringing together Chardonnay from his biodynamically farmed parcels around Vitry-en-Perthois, including Couvrot and Val-de-Viède. The vineyards lie on the chalk soils of the Coteaux Vitryats, where Chevalier works exclusively with Chardonnay.
Fermentation is with indigenous yeasts, followed by lees aging in barrels and stoneware. The wine is made without added sulfites, fining or filtration and finished with zero dosage. It shows green apple and citrus with a firm, chalky structure, bright acidity and a long saline finish.
